Ingredients:
- 2 small corn tortillas
- 1 large egg
- 50g of diced bell peppers
- 30g of chopped onion
- 1 tablespoon of olive oil
- 30g of shredded cheese
- Salt and pepper to taste
- 2 tablespoons of salsa

Instructions:
- Heat the olive oil in a frying pan over medium heat.
- Add the diced bell peppers and chopped onion to the pan and sauté for about 5 minutes or until softened.
- Crack the egg into a mixing bowl, add salt and pepper, and whisk until well combined.
- Pour the whisked egg into the pan with the vegetables and scramble everything together until the egg is cooked through.
- Warm the corn tortillas in a separate pan or microwave for a few seconds until pliable.
- Lay the warmed tortillas flat and spoon the egg and vegetable mixture evenly onto each one.
