  • 2 large eggs
  • 50g of cheddar cheese, shredded
  • 50g of diced bell peppers
  • 50g of diced onions
  • 50g of canned chili beans, drained
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions:

  • In a bowl, whisk the eggs until well beaten.
  • Heat the olive oil in a frying pan over medium heat.
