Roasted Red Pepper Hummus is a vibrant twist on the classic hummus, adding a rich, smoky flavor from roasted red bell peppers. The combination of creamy tahini, garlic, olive oil, and a touch of cumin creates a delicious, healthy dip perfect for pita, veggies, or as a spread.

Ingredients:

  • 1 cup of canned chickpeas (drained and rinsed)
  • 1 medium roasted red bell pepper (peeled and chopped)
  • 2 tablespoons of tahini
  • 1 clove of garlic (minced)
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • Salt to taste
  • 1/4 teaspoon of cumin (optional)
  • Water as needed for desired consistency

Instructions:

  • Preheat the oven to 400°F (200°C).
  • Place the red bell pepper on a baking sheet and roast in the oven for 20-25 minutes, or until the skin is charred and blistered.
  • Once roasted, remove the pepper from the oven and let it cool. Peel off the skin and remove the seeds.
  • In a blender, combine the chickpeas, roasted red bell pepper, tahini, minced garlic, olive oil, lemon juice, salt, and cumin (if using).
  • Blend until smooth, adding water slowly to reach your desired consistency.
  • Taste and adjust seasoning if necessary, then transfer to a serving bowl and drizzle with a little extra olive oil on top.
